The effervescent freshness of bergamot orange is studded with pink peppercorns – a mystery as to whether it was intended to recall keepsake pomanders from the late Middle Ages, or a simple olfactory accident. What lies between the flower and the spice has the effect of an exclamation mark – a Capital letter.
