This black garlic ketchup was created for Liberty by Hawkshead Relish, an artisan producer based in a 16th-century converted barn in the heart of the Lake District. Made in small batches with ingredients sourced from local suppliers, this ketchup is crafted from crushed black garlic bulbs combined with tomatoes, olive oil and balsamic vinegar, then finished with spices and Anglesey sea salt for the perfect moreish flavour finish. Use it to season red meat or scallops, or add it as a secret ingredient to casseroles and risottos.
